Swiss Saskatoon Berry Cream

envelope gelatin


1/4

cup water


1/2

teaspoon lemon peel


1/4

cup lemon juice


1

pint yogurt, orange


1

cup heavy whipping cream


1/2

cup white sugar

cups saskatoons

 

Instructions

1. Sprinkle gelatin over water in small heat-proof bowl, let stand for 3 minutes until softened.

2. Set bowl in pot of boiling water, stir gelatin until dissolved.

3. Remove from heat and pour into large bowl.

4. Stir in sugar, lemon peel, juice, and yogurt; blend well.

5. Whip cream.

6. Fold in saskatoons and whipped cream.

7. Spoon mixture into dessert glasses of at least a 6 oz capacity. Chill until set, about 3 hours.

Garnish each dessert with fresh saskatoons before serving.
