Very Berry Shortcakes And Cream

cup saskatoons

cup white sugar

cups Bisquick baking mix

cup milk

tablespoons white sugar

tablespoons butter, melted

cup sour cream

tablespoons brown sugar, firmly packed

 

Instructions

1. Sprinkle fruit with 1/3 cup sugar, let stand for 1 hour.

2. Heat oven to 425° F.

3. Mix Bisquick, milk, 3 tbsp sugar, and the butter until a soft dough is formed.

4. Smooth dough into a ball on a surface lightly floured with baking mix. Knead 8 to 10 times. Roll out dough 1/2" thick.

5. Cut with a floured 3" round cookie cutter.

6. Bake on a parchment covered or ungreased cookie sheet until golden brown, 10 t0 12 minutes.

7. Mix sour cream and brown sugar.

8. Split shortcakes horizontally, fill with fruit and then with sour cream, and put shortcake top back on.

 

Whipped cream can be used instead of sour cream.
