Wild Rice and Saskatoon Salad

1 1/4 cups dry rice (mixture of brown rice & wild rice)
2 1/2 cups boiling water or chicken stock
2 Tbsp olive or sesame oil
1/2 to 1 Tbsp honey
2 tsp prepared mustard (any kind)
3/4 tsp salt
1/4 to 1/2 tsp cinnamon
1/4 cup chopped green onion
1/2 to 1 cup saskatoon berries
     (you can substitute 1/4 cup raisins if making this out of berry season)
1/4 cup seeds or chopped nuts



Instructions

1. Add rice to 2 1/2 cups of boiling liquid. Turn heat to low, cover,
and simmer about 45 minutes, until rice is fully cooked.

2. Let rice cool in open pot for awhile.

3. Stir in oil and let sit some more.

4. While rice is still warm combine honey, mustard, salt, and cinnamon and stir this seasoning into rice. Let cool to room temperature.

5. Add green onions and berries.

6. Top with seeds or chopped nuts.
